I cooked manti at home for the first time in my life according to my mother’s recipe, and they turned out very tasty! I decided to share the recipe. Pay attention that of 2 eggs, 2 tbsp. l oil, 200 ml of water and 700 g of flour I got quite a lot of dough from which I prepared manti and khanum. If you cook only manti, then you need to either increase the amount of meat and onion, or reduce the amount ingredients for the test up to 1 egg, 100 ml of water, 1 tbsp. l oil and 350 g flour. Quantity is approximate if dough is obtained too steep, then add some water, and vice versa.

  1. First, let’s prepare the dough.
  2. Break 2 eggs into a deep plate, add salt, vegetable oil and warm boiled water, whisk everything until homogeneity.
  3. Pour the flour into a large deep container, make flour well.
  4. Pour part of the egg mixture, and knead the dough.
  5. Then pour the rest of the mixture and continue to knead the dough with your hands until you get an elastic homogeneous dough.
  6. Wrap the dough in cling film or just put it in airtight container and leave alone for half an hour – an hour. And in this time we’ll deal with the filling.
  7. We wash the meat, cut into small pieces of the same size.
  8. Peel the onion and cut into half rings. Can be chopped finely, but I like it more precisely half rings.
  9. Mix meat with onions in a deep bowl, add to taste salt, black pepper, zira and spices for meat. Spices for meat Oriental, you can buy these in the market.
  10. We mix everything.
  11. Cut off part from the dough and form a small “sausage”. This cut the sausage into circles 1 cm wide.
  12. Roll each circle in flour and roll.
  13. On each rolled circle we lay out the filling and sculpt our manti.
  14. The mantle tiers are greased with vegetable oil.
  15. Pour water into the lower tier of the mantle, put the manty in the remaining tiers, close the lid. Cook about 40 minutes on high heat.
