Thanks to pearl couscous, a very healthy salad with tuna (and without mayonnaise!) from Aina Garten boasts a fresh taste каперсов, лимона и оливок. Time: 45 мин.Difficulty: easy. Servings: 6-8. Ingredients for the recipe:
- 2 tbsp. (280-340 g) Israeli couscous ptim
- 2 cans (200 g each) of canned tuna (drain the brine and knead the pulp)
- 2 tsp grated lemon zest (from 2 lemons)
- 1/4 Art. freshly squeezed lemon juice
- 1/2 tbsp. good quality olive oil
- 3 tbsp. l capers without brine
- 1/2 tbsp. (85 gr.) Coarsely chopped pitted black olives in oil
- 1/2 tbsp. (110 gr.) Canned baked red pepper, diced medium sized
- 2 tsp (2 cloves) crushed garlic
- Coarse salt and freshly ground black pepper
- 1 tbsp. (6-8 stems) chopped green onions
- 1/4 Art. julienne leaves of fresh basil (lightly tamp)
- Juice 1/2 Lemon

Recipe preparation:
- In a medium-sized saucepan, bring 4 tbsp to a boil. water. Add couscous and reduce heat to very low. Cover and cook for 12-15 minutes. to softness. (I remove the pan from the fire in in the middle of cooking – Ina says). Drain using a colander.
- While couscous is cooked, in a large bowl mix tuna, zest lemon, lemon juice, olive oil, capers, olives, red pepper, garlic, 1 tbsp. l salt and 1.5 tsp black pepper. Put in this mixture is hot couscous and mix well. Cover and give stand for 10-15 minutes, stirring occasionally. Mix before serving with onions, basil, juice 1/2 lemon and another 1 tsp. salt. Try to get enough spices and serve the salad warm or room temperature.
