Homemade Marshmallows with Coconut

  • 1 tbsp. l vanilla extract
  • Powdered sugar
  • 200 gr. sweetened coconut flakes, fry

Recipe preparation:

  1. Combine gelatin and 1/2 tbsp. cold water in a bowl electric mixer equipped with whisks and let swell gelatin while you make syrup.
  2. In a small saucepan, combine sugar, corn syrup, salt and 1/2 tbsp. water and cook over medium heat until sugar will dissolve. Increase temperature and continue boiling until the temperature of the syrup will not reach 115 ° C. Remove from heat.
  3. With the mixer running at low speed, slowly pour in sugar syrup in dissolved gelatin. Increase speed and beat the mixture for about 15 minutes until it becomes very thick. Add vanilla and mix thoroughly.
  4. Generously sprinkle the mold (20 * 30 cm.) With powdered sugar, cover 1/2 coconut flakes. Pour gelatin into prepared form. Flatten and sprinkle with the remaining coconut. Give thicken overnight at room temperature.
