Frittata with cheese and asparagus

Ingredients for the recipe:

  • 8 large eggs
  • 0.5 tbsp. grated cheese monterey jack
  • 1 tsp coarse salt
  • 1 tbsp. l vegetable oil
  • 1 tbsp. l (15 gr.) Butter
  • 450 gr asparagus, sliced and sliced obliquely into pieces by 0.5 cm. (About 3 tbsp.)
  • 3 tbsp. l coarsely chopped fresh cilantro leaves
  • Green salad for serving

Recipe preparation:

  1. Preheat the oven in grill mode and set the grid to the upper third of the oven.
  2. In a large bowl, beat the eggs, cheese, salt and freshly ground black pepper. In a large pan suitable for the oven, heat on moderately high heat vegetable and butter. When is it foams, add asparagus, salt and pepper well and fry, stirring occasionally until tender, about 5 minutes. Intervene cilantro.
  3. Reduce heat to low, pour in egg mixture and fry until the egg does not harden about 2.5 cm from the edges, about 3 minutes (in this moment the center of fritate will still be liquid). Put the pan in bake and grill until eggs are frozen and brown for about 2 minutes. Slice and serve with green salad. Fritate can be served warm or roomy temperature.
