Fries with potatoes and turkey

  • 1/2 tbsp. chopped leftover turkey meat
  • 1 tbsp. chopped boiled potatoes
  • 6 lightly beaten eggs
  • 1/4 Art. cream
  • 1 tbsp. l olive oil
  • 1/2 chopped onion
  • 1/2 chopped red or green bell pepper
  • Salt and Freshly Ground Peppers
  • 2 tbsp. l chopped parsley, basil or cilantro
  • 1/2 tbsp. grated cheddar cheese, monterey jack or mozzarella

Recipe preparation:

  1. Preheat the broiler in the oven. In a large skillet with non-stick over medium heat, heat oil. Put onion and bell pepper and fry for 3 minutes. Add potatoes and sauté until golden brown. Add mix the remaining meat. In a bowl, beat the eggs with cream, salt and pepper. Pour the egg mixture into the pan and add basil, cilantro and parsley. Sprinkle with grated cheese and place under broiler for about 2-3 minutes, until frit airborne.
