- 3 tbsp. l white wine vinegar
- 1 tbsp. l Dijon mustard
- 1/2 tbsp. olive oil
- 2 tsp honey
- Salt and freshly ground black pepper
For potatoes:
- 1/4 Art. vegetable oil
- 2 tbsp. l (30 gr.) Unsalted butter
- 1 half-sliced medium Spanish onion
- Pinch of sugar
- 1 tbsp. l finely chopped fresh thyme leaves
- Coarse salt and freshly ground black pepper
- 6 large sweet potatoes, diced 2.5 cm

Recipe preparation:
- For the sauce: In a blender, mix onions, vinegar, mustard and several tbsp. l cold water and beat until smooth. Not turning off the blender, slowly add the olive oil and continue beat until emulsion is formed. Add honey, some salt and pepper and start the blender several more times in pulse mode, so that everything mixes up.
- For potatoes: Preheat 1 tbsp. l vegetable oil and 1 tbsp. l (15 gr.) Butter in a medium-sized stewpan on medium heat. Add onions and a pinch of sugar and cook, stirring occasionally until golden brown and caramelized onions, about 30 minutes Add thyme, salt and pepper.
- While the onion is caramelized, put the potatoes in a pan medium sized in cold salt water. Bring the water to a boil and cook until soft 10-12 min., but if the potatoes pierce with a knife, inside it must remain resilient. Drain using colander, and pat dry on a paper towel.
- Heat the remaining butter and vegetable oil on a cast-iron pan over medium-high heat. Add potatoes and cook, firmly pressing with a spatula until the bottom side is browned, about 5 minutes Add caramelized onions and pour sauce with green onions and mix.
