Stir 900 gr. tomato (cut into wedges), 2 thin chopped fennel bulbs and 1/2 finely chopped heads red onion with 1/3 tbsp. olive oil and 3 tbsp. l white wine vinegar. Season 1.5 tsp. coarse salt, 1 tsp. sugar and generous amount of pepper. Allow the salad to infuse for a minimum of 30 minutes. Before serving, mix with 1 tbsp. fresh parsley and 1/2 tbsp.
