A rich chocolate flavor gives this sorbet double chocolate: chocolate syrup made from sugar, cocoa powder and water, and finely chopped bitter chocolate. The two ingredients are mixed together until obtaining a homogeneous mass, which is then carefully cooled in refrigerator and freeze in an ice cream maker. For serving chocolate sorbet prepare candied kumquats. Their vibrant citrus flavor perfectly combined with the taste of dark chocolate. Ingredients for the recipe:
Sorbet
- 2 tbsp. water + 2 tbsp. water
- 3/4 Art. + 2 tbsp. l Sahara
- 3/4 Art. cocoa powder
- 240 gr. dark chocolate chopped
Candied Kumquat
- 2.5 tbsp. Sahara
- 1.5 tbsp. water
- 2 tbsp. washed and chopped kumquat

Recipe preparation:
- In a medium-sized saucepan, mix 2 tbsp. water and sugar and on high heat, stirring occasionally, bring to a boil. Turn down fire to a minimum and gradually stir in cocoa powder, whisking until obtaining a homogeneous mass. Simmer 30 minutes, until the consistency of the syrup.
- Put the chocolate in a large bowl and add half whipping chocolate syrup until chocolate melts and the mixture will become homogeneous. Add the remaining syrup and 2 tbsp. water and good whisk. Strain the mixture through a fine sieve and cool.
- Put the mixture for sorbet, covering, in the refrigerator for at least 4 hours and up to 2 days. Then freeze in the ice cream maker according to manufacturer’s instructions. Output: about 1 liter.
- Serve the sorbet with candied kumquats.
Candied Kumquats
In a medium-sized saucepan, mix sugar and 1.5 tbsp. water. Bring to a boil, stirring constantly to dissolve the sugar. Add kumquats, reduce heat to low and simmer for about 6 minutes or until kumquats will not become translucent. Drain before serving. Kumquats can be stored in the refrigerator for several недель.
