For Easter we will need:

  • cottage cheese 1 kg
  • steamed dried apricots 150 gr
  • ground almonds 50 gr
  • vanilla sugar 1 pack (20 gr)
  • butter 200 gr
  • 35% cream 200 ml
  • 3 egg yolks
  • granulated sugar 200 gr

You can cook curd Easter like this:

Cooking Easter I recommend starting the day before the Great holiday. Cottage cheese (I recommend home-made cottage cheese) spread on cheesecloth in a sieve, cover with gauze as well and put the press, in order so that excess moisture is gone. Then wipe the curd through a sieve and add steamed dried apricots cut into pieces and chopped roasted almonds. All ingredients are thoroughly mixed.

Beat the softened butter in the foam and add curd mass.

Beat the yolks with sugar, add warm (37-40 degrees) cream, and whisk again for 5-7 minutes until the cream cools. Mix with curd cream.

Pour the resulting in a mold for Easter or put in a beautiful cone-shaped deep not wide bowl, put a press on top and put in the refrigerator for 10-12 hours.
