Mexican Style Cupcakes with Curd Frosting Time: 40 min Difficulty: medium Quantity: one 2 cupcakes Recipes used volumetric containers: 1 cup (tbsp.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1teaspoon (tsp) – 5 ml.

Ingredients for the recipe:

Cupcakes

  • 1/2 tbsp. milk chocolate
  • 220 gr butter
  • 1 tsp vanilla extract
  • 1 tbsp. Sahara
  • 3 large eggs
  • 3/4 Art. premium flour
  • 1/3 Art. cocoa powder
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 12 tbsp. peanut butter

Curd glaze

  • 225 gr. cream cheese at room temperature
  • 110 gr. butter at room temperature
  • 1 tsp chili powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 3 tbsp. sifted icing sugar
  • 100 gr. melted dark chocolate

Recipe preparation:

  1. Preheat the oven to 180 ° C. Place molds on a standard form for cupcakes. Preparing cupcake dough: in a large heat-resistant bowl mix the chocolate and butter over the pan with boiling water, while the water should not touch the bowl. Neatly mix until the mixture melts and is homogeneous. At you can use a microwave if necessary. Take off chocolate from the stove and add vanilla and sugar. Beat mixture for about 3 мин. homogeneity with a hand-held electric blender. Add eggs one at a time, stirring for 20 seconds. after adding each egg.
  2. Sift flour, cocoa powder, baking powder and salt. Mix everything until smooth. Using a cooker or a small measuring cup, fill out the cupcake forms by 2/3. Add peanut butter to the center of each mold and gently squeeze it. Bake until the cupcakes are hard for about 20 minutes. Recipe for a cupcake with glaze from cottage cheese cream cheese “Red Velvet”. For preparation of curd glaze: using a hand blender mix cream cheese and butter thoroughly. Add chili powder and cinnamon, mix. Add salt, vanilla and powdered sugar. Mix with melted chocolate and mix thoroughly until obtaining a homogeneous mass. If the frosting is not thick enough gradually add the sifted icing sugar in a small amount until the required consistency is reached.
