Baked pork
- 1 boneless pork shoulder (1.4 – 1.8 kg.)
- 2 tbsp. l canola oil
- 4 tbsp. low salt chicken stock
- 2 bay leaves
- 1 coarsely chopped (medium or large pieces) head sweet onions
Marinade Moyo
- 1.5 tbsp. fresh orange juice
- 1/2 tbsp. fresh lime juice
- 1 zest zest
- 1 zest of orange
- 3 tbsp. l finely chopped fresh oregano
- 2 tbsp. l finely chopped fresh cilantro
- 2 tbsp. l chopped garlic
- 2 tsp cumin
- 1 tbsp. olive oil
- Salt and ground black pepper
Cuban sandwiches
- 4 loaves (15 cm.) Of Cuban bread
- 1/3 Art. Dijon mustard
- 4 thinly sliced pickled cucumbers (approximately 20 circles)
- 340 gr thinly sliced finished ham
- 8 slices of Swiss cheese
- 4 tbsp. l olive oil

Recipe preparation:
- For the Moyo marinade: Cut off excess fat from pork and remove the veins. Cook the Moyo marinade by mixing in a large bowl juices and zest of citrus, oregano, cilantro, 1.5 tbsp. l garlic and cumin. Stir in olive oil. Put the bandaged pork in a tight plastic bag and fill with marinade. Sprinkle with salt and pepper. Leave to marinate for 30-40 minutes. at room temperature. When the meat is pickled, remove it from the bag and shake off excess fluid. Save the marinade.
- For baked pork: Preheat a 6 liter pressure cooker over moderately high heat. Pour canola oil and increase the heat to strong. Fry the meat on all sides. Then add chicken broth, bay leaves, onions and remaining marinade. Close the lid and reduce the heat to low. Cook until meat is soft, 30-45 min. Get the meat, put it on a cutting board and give rest 5-7 minutes. Cut into thin slices.
- For Cuban sandwiches: Cut with a knife with cloves cuban bread in half. Start collecting sandwiches. First spread Dijon mustard bread. Put 5 circles of cucumbers, approximately 85 column ham and several slices of pork. Put 2 slices on top cheese. Cover with the top half of Cuban bread. Repeat the same actions with the remaining sandwiches.
- For serving: Preheat the grill pan with a flat surface over medium heat and add olive oil. Put sandwiches in a pan and press down on top of a cast iron a frying pan. Press the sandwiches until the bread is browned and the cheese will melt, 2-3 minutes Remove from the pan and cut in half. Secure with bamboo skewers and serve immediately.
