Chocolate and Banana Muffin

For the test:

  • 120 gr. butter, melt and cool (or 1/2 tbsp. vegetable oil), plus a little to lubricate the mold
  • 1 tbsp. with a hill of premium flour
  • 3/4 Art. granulated sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp drinking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp grated nutmeg
  • 1 tbsp. large pieces (0.5-1 cm.) of dark chocolate, freeze before adding to dough
  • 2 large eggs
  • 1/2 tbsp. Greek yogurt or sour cream
  • 1 tsp vanilla extract
  • 1 tsp grated orange peel (optional)
  • 1 tbsp. mashed bananas

For glaze:

  • 1 tbsp. powdered sugar
  • 2 tbsp. l cocoa powder
  • 2 tbsp. l milk
  • 1/4 tsp vanilla extract
  • A pinch of salt

Recipe preparation:

  1. Preheat the oven to 180 C. Lightly oil a rectangular cake pan, size 13 by 23 cm.
  2. Sift flour, baking powder into a large bowl through a fine sieve, salt, baking soda, cinnamon and nutmeg, add sugar sand, pieces of chocolate and mix with a spoon.
  3. Beat eggs in a bowl with a whisk, melted butter, yogurt, vanilla and orange zest. Then pour the resulting mass into bowl with flour, add chopped bananas and mix using spoons, until smooth.
  4. Pour the resulting dough into the prepared form, and bake until ready, approximately 55 minutes (readiness can be checked using a toothpick, piercing the center of the cake, the toothpick should be dry). Remove from mold and refrigerate for 30 minutes.
  5. Prepare chocolate icing: mix sugar in a bowl powder, cocoa powder, milk, vanilla and salt, mix thoroughly with using a whisk, until smooth. Pour banana cupcake icing, and let harden, 15 – 20 minutes. Maybe you interested in the recipe for a rum woman.
