Cheese Pancakes with Fried Pineapple

Delicious tropical pancakes with delicate filling from a mixture of light cream cheese and Italian diet ricotta cheese. Such the dish will be a great alternative to any dessert. Fried pineapple with nuts themselves are a gourmet dish, and together with the tenderness of cheeses this tropical sweet will be perfect flavor combination. Serving such pancakes, you can add a ball ice cream, creamy ice cream without additives is perfect, which will well tint the taste of the whole dish.

Ingredients for the recipe:

Pancakes

  • 2 eggs
  • 1/2 tbsp. milk
  • 1/2 tsp salt
  • 1 tsp crystalline sugar
  • 1/2 tbsp. flour
  • Butter

Cheese filling

  • 1/2 tbsp. chilled butter cream
  • 1/2 tbsp. ricotta
  • 230 gr. cream cheese, room temperature
  • 1/2 tbsp. Sahara
  • 1 tsp vanilla extract
  • 1/2 tsp grated orange zest
  • Powdered sugar

Fried pineapple

  • 1/3 Art. cane sugar
  • 1 tbsp. coarsely fried macadamia nuts
  • 4 tbsp. l (60 gr.) Melted butter
  • 1 pineapple, peeled and sliced

Recipes with similar ingredients: eggs, milk, sugar, higher flour varieties, butter, cream, ricotta cheese, curd cheese, vanilla extract, orange zest, icing sugar, sugar brown, macadamia nut, pineapple

Recipe preparation:

  1. Pancakes: Beat eggs and milk in a bowl. Stir in the salt crystalline sugar and flour. Set aside for 30 minutes.
  2. Preheat the oven to 90 degrees and place the pan in the oven is warm.
  3. Melt approximately 1/2 tsp. oil in a pan with 20-25 cm in diameter over medium heat. When it starts to foam add about 2 tbsp. test. Lift and tilt the pan, so that the dough covers its entire surface. Put the pan back on fire and leave until ready, the lower side should be slightly brownish. Transfer to an already heated baking sheet. Repeat for the remaining test.
  4. Cheese filling: Whip cream until thick and refrigerate. Mix ricotta and cream cheese in a mixer to a homogeneous mass (it will not work perfect anyway due to grit ricotta, do not worry about this). Add sugar vanilla, zest and mix. Add whipped cream. Leave in refrigerator before serving.
  5. Roasted Pineapples: Mix Sugar, Nuts and Creamy butter. Sprinkle pineapple with this mixture and fry.
  6. Remove the pancakes from the oven. Spread each pancake one by one cheese filling and twist like a cigar. Sprinkle with powdered sugar and serve with fried pineapple.
