Campanas Mexican puffs are very similar to our puffs “tongues” with the only difference being that after baking they put on for a while under the heating element of the oven to make sugar melted and caramelized. If you already have a ready puff the dough, then prepare campanas is not difficult. Chop it sprinkle with sugar and bake. Puffs get airy crispy and very tasty. Recipe preparation:
- Preheat the oven to 190 ° C. Set the oven grill to average level.
- Place the dough on a lightly floured work surface. and roll into a layer approximately 0.5 cm thick. Generously on top of the dough sprinkle with sugar, about 0.5 tbsp. sugar 450 gr. test. Gently push sugar into the dough with a rolling pin to make it stick.
- Using a sharp knife or pizza knife, cut the dough into 7 cm squares, then each square – into 2 triangles. Gently shift the triangles onto the non-stick baking sheets coated, taking care not to sprinkle sugar. Teflon coating allows you to bake several batches without washing the pan after each, but if you don’t have such a baking sheet, put the dough directly on the surface of the ordinary without lubricating it with oil. During baking, do not get distracted by other things, otherwise all your puffs will burn!
- Bake for about 15 minutes or until puffs look lush and ready. Top they should be golden colors, and sugar should not be caramelized. Quick swap a baking sheet under the heating element and leave it on several seconds to caramelize sugar sprinkles. Immediately shift to the cooling grid. Caramelized sugar is very hot. Do not try puffs directly from the oven. Give them a few minutes cool and harden, then you can eat.
