Cakes a la mod with pecans and bacon

Difficulty: easy Quantity: 9 cakes The recipes use volumetric containers with a volume of: 1 cup (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cup (st.) – 120 ml 1/3 cup (st.) – 80 ml. 1/4 cup (st.) – 60 ml. 1tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml.

For filling:

  • 3 large eggs
  • 1/3 Art. Sahara
  • 8 sliced bacon, diced
  • 1 tbsp. corn syrup or invert syrup
  • 5 tbsp. l melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp cider vinegar
  • 1 tbsp. pecans or walnuts + a little for decoration
  • Vanilla ice cream for decoration

For the base of the cakes:

  • 1 1/4 Art. wheat flour
  • 1/4 Art. Sahara
  • Salt
  • 2 tsp freshly squeezed lemon juice
  • 6 tbsp. l cold unsalted butter, chopped cubes + a little to lubricate the mold

Recipe preparation:

  1. Prepare the base for the cakes: preheat the oven to 190 ° C. Cover the bottom and sides of a square shape of 20×20 cm with foil, so that the edges of the foil 2 cm protrude above the sides. Lightly grease the foil with butter.
  2. In a large bowl or food processor, combine flour, sugar and salt. Add chilled butter and mix quickly until formation of a homogeneous mass. Add lemon juice and knead homogeneous dough. Spread the dough evenly on the bottom prepared baking dish and bake until golden brown 15 minutes.
  3. While the base for the cakes is baked, prepare the filling: fry the bacon cubes until crisp. Put them on paper towels to stack excess fat. In a separate bowl beat eggs, corn syrup, sugar, melted creamy oil, vanilla extract and apple cider vinegar.
  4. Spread the pecans and the fried bacon into cake base surface, top with egg-oil a mixture. Bake until golden brown for 30-35 minutes. Remove the pan from the oven and let it cool completely, then gently remove the cake from the mold using foil.
  5. Cut the cake into squares, decorate the cakes with a ball vanilla ice cream and pecans.
