Cake with Strawberries and Whipped Cream

For biscuit:

  • 1.5 tsp pasta from vanilla pods (or seeds from 1/2 pod vanilla)
  • 2 beaten eggs at room temperature
  • 3/4 Art. milk at room temperature
  • 1/2 tsp grated lemon peel
  • 5 tbsp. l melted unsalted butter and more a little to grease the baking dish
  • 1 and 1/3 Art. flour and some more to sprinkle
  • 1 and 1/4 Art. granulated sugar
  • 1 and 1/4 tsp baking powder
  • 1/2 tsp salt

For toppings and decorations:

  • 1.5 tbsp. chilled butter cream
  • 1.5 liters strawberries without stalks
  • 1 tbsp. l strawberry jam
  • 3 tbsp. l powdered sugar
  • 1/4 tsp vanilla extract
  • 1 tbsp. l freshly squeezed lemon juice

Recipe preparation:

  1. Preheat the oven to 175 degrees. 20 cm shape for bake grease with butter. Put on the bottom of the form parchment paper. Grease the paper with butter and sprinkle with flour.
  2. Make a biscuit: in a medium bowl, mix the flour, granulated sugar, baking powder and salt. In another bowl, mix until homogeneous melted butter, pounded pods vanilla, eggs, milk and lemon zest. Add the resulting liquid to dry the mixture and mix thoroughly with a wooden spoon. Pour out the dough in prepared form and bake for 35-40 minutes. Toothpick, stuck in the middle of the biscuit, should remain clean. Biscuit take out and leave in shape for 10 minutes. Then take it out of the mold and let it cool completely.   3. Meanwhile, prepare the filling: 16 berries of strawberries cut in half. In a medium bowl, mix until smooth. consistency 1 tbsp. l water and strawberry jam. Add the halves berries, mix and set aside. Remaining strawberries cut into thin slices and mix in a separate bowl with 2 tbsp. l powdered sugar and lemon juice. Set aside. In a bowl whip with a mixer the cream remaining 1 tbsp. l powdered sugar and vanilla extract. You should get a thick foam. Whipped put the cream in the refrigerator.
  4. Carefully cut the biscuit into two cakes. Top part put on a plate with the cut up. Sprinkle both cakes with juice from chopped strawberries. A few tablespoons of whipped cream add to sliced berries. Put the resulting mixture on bottom layer of the cake. Cover it with the top layer, lay on top the remaining whipped cream.
