Burrito for breakfast

This type of burrito is a fairly common breakfast in the USA. The Americans borrowed the idea of a Mexican burrito and became wrap your breakfast in cakes so that you can there is comfort, for example, on the way to work. All ingredients breakfast – vegetables, scrambled eggs with fried potatoes, cheese and fried chorizo sausage without shell – tightly wrapped in a large tortilla, where they stay warm for a long time. Burrito

  • 4 large tortillas for burritos
  • 2 tsp vegetable oil
  • 240 gr. raw mexican chorizo sausage, shell take off
  • 1 tbsp. frozen potatoes with peppers and onions for frying
  • 8 large eggs
  • Spicy sauce
  • 1 avocado, chopped
  • 0.5 tbsp. finely grated cheddar

Pico de gallo

  • 2 Tomatoes Cream, diced
  • Half jalapeno diced (optional) clear of seeds)
  • Half a small red onion, diced
  • 0.5 tbsp. coarsely chopped fresh cilantro leaves (set aside a bit to feed)
  • Half lime juice

Recipe preparation:

  1. Pico de gallo: mix the tomatoes in a small bowl, jalapenos, onions, cilantro and juice. Salt and pepper.
  2. Filling: in a large frying pan with non-stick coating over medium heat, heat the vegetable oil. Add chorizo and fry, breaking, until lightly crispy, about 5 minutes. Place the slotted spoon on a paper-covered plate towels. Add potatoes to the pan and fry, periodically stirring until it turns golden brown and crispy, 8-10 minutes.
  3. In a medium-sized bowl, beat eggs until foam appears. Salt, pepper and add a couple of drops of hot sauce. Overfill eggs on potatoes and fry, stirring until they freeze, about 3 minutes. Put out of the pan and keep warm.
  4. Wipe the pan and place it on the stove again. Warm up on pan every tortilla.
  5. Burrito: lay in layers on a tortilla avocado, filling, about 1 tbsp. l pico de gallo and sprinkle with cheese. Fold the tortilla with two sides and roll into a tight roll. Sprinkle with cilantro and serve with pico de gallo and spicy sauce.
