Blueberry kefir muffins with corn flour

  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 and 1/3 Art. premium wheat flour, plus 1 tbsp. l
  • 1 and 1/3 Art. (approximately 200 g) yellow cornmeal
  • 3/4 Art. Sahara
  • 1 tbsp. l baking powder
  • 3/4 tsp fine salt
  • 170 g chilled unsalted butter, chopped 1.5 cm cubes
  • 1.5 tbsp. (200-225 g) frozen blueberries, do not defrost

Recipe preparation:

  1. Install the grill in the center of the oven and heat it to 205С. Insert into 12 standard size paper muffins molds.
  2. In a large bowl, combine kefir, eggs and vanilla extract. Вfood processor mix 1 and 1/3 tbsp. flour, corn flour, sugar, baking powder and salt, about 30 seconds. Add chilled diced butter.   3. In a medium-sized bowl, mix the remaining 1 tbsp. l flour and frozen blueberries. Shuffle. Pour the berries onto the dough and mix.
  4. Fill the molds, pouring about 1/3 tbsp. in every way so that in the center a small hill forms. With a knife and spoon get at least one berry so that it is visible from above.
  5. Bake muffins for 20-25 minutes, until they rise and brown at the edges, but a stick inserted in the middle will not work clean. Let the muffins stand for 5-10 minutes. Twist each one to separate it from the form. Take out the mini muffins and set them to cool to the grate.
