For the basics:

  • 200 g shortbread cookies
  • 100 g butter
  • 1/4 teaspoon ground ginger

For filling:

  • 500 g soft cream cheese
  • 1 cup 35% cream
  • 3 eggs
  • 150 g sugar
  • 400 g blueberries
  • 2-3 tbsp. tablespoons of honey
  • 1 tbsp. a spoonful of starch

Recipe preparation:

  1. Crumble cookies, grind with softened butter, adding ginger until smooth. Put in a round shape, making low sides, press firmly to the bottom and walls forms. Put in the refrigerator for 20 minutes.
  2. Beat cheese with sugar until smooth. Continuing beat, one at a time add all the eggs, then add sour cream. Put the cream on the base and bake in the oven at 160 C for 45-50 minutes. Cool the finished base and put it in the refrigerator for 5-7 hours.
  3. Rub half the blueberries through a sieve, add 1/4 in mashed potatoes glasses of water and honey, put on low heat and cook for 10 minutes. Put the remaining berries and cook for 3-4 minutes. Enter divorced in 2 tbsp. tablespoons of cold water starch and boil the sauce until thickened. Cool.
  4. Pour the chilled cheesecake into the resulting sauce, chop in portions and serve.
