National Slovenian cake made in the form of baked together rolls. The word midwife also means “roll”, which comes from southeast of Slovenia, Bela Krajina region. Into thin crust, mixed in flour, egg, vegetable oil and vinegar, spread a variety of fillings and roll up. Then a few such rolls are laid out in a spiral and baked. - 0.5 kg premium flour
- 1 egg (beaten)
- 2 tbsp. l vegetable oil
- A pinch of salt
- 1 tsp cider vinegar
- 1/3 – 0.5 l. a little warm water
Filling
- 2 eggs (beaten)
- 2-3 tsp salt / 2-3 tsp sugar (whichever unsweetened or sweet midwife you make)
- 500 gr. ricotta cheese
- 1 liter milk
- 2 l sour cream
- 200 gr. butter
- Pork cracklings (for unsweetened withers)
- Raisins (for sweet midwife)
- Grease egg

Recipe preparation:
- Combine flour, egg, salt, butter, apple cider vinegar and water. Knead the dough is 10 minutes. Divide the dough into four parts. Form balls, grease them with oil and leave for 30 minutes.
- Roll the dough balls into four very thin the rectangle. Trim all thick edges and let the dough lie another 15 minutes before applying the filling.
- Stuffing: in a large bowl, mix ricotta with creamy butter, sour cream and milk. Mix the eggs with a mixer and either salt (for salt midwife), or sugar (for sweet midwife). Stir until a thick creamy mass, then add or cracklings (salted midwife), or raisins (for sweet midwife).
