Waffles
- 1 tbsp. (285 gr.) Gluten-free flour mixture, recipe below
- 0.5 tbsp. (55 gr.) Quinoa flour or amaranth flour
- 2 tbsp. l maple syrup or coconut sugar
- 2 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp salt
- 1.5 tbsp. unsweetened hemp milk
- 0.33 Art. flaxseed oil or coconut oil without flavors liquefied
- 2 large eggs at room temperature
- Finely grated zest of 2 lemons
- 2 tbsp. l lemon juice
- 2 tbsp. l chia seed
- 1 tbsp. l poppy
- 2 tsp vanilla extract
- Maple syrup, warmed up
- You will need: a waffle maker for Belgian waffles, warm to medium-high heat
Gluten Free Flour Mix
- 3 tbsp. (435 gr.) White rice flour
- 1.5 tbsp. (190 gr.) Tapioca flour
- 0.75 Art. (120g.) Potato starch
- 1 tbsp. l (8 gr.) Xanthan gum
- 1.5 tsp salt
- Combine all the ingredients in a large bowl.

Recipe preparation:
- In a large bowl, mix the gluten-free flour mixture, flour quinoa, sugar, baking powder, baking soda and salt. In a bowl of medium sizes, beat milk, butter, eggs, lemon zest, lemon juice, chia seeds, poppy seeds and vanilla. Add liquid ingredients to flour mixture and beat to mix.
- Lubricate the hot waffle iron with oil and pour about 0.33 tbsp. test for each square; close and cook until the waffles are crispy, about 5 minutes. Serve immediately with warm maple syrup.
