Recipe preparation:

  1. Preheat the oven to 200 ° C. If you use young beets, wrap 3-4 beets together in foil and place on a baking sheet. Wrap large beets separately. Bake beets while it will not become soft and will be easily pierced with a knife to the center, about 20 minutes for young beets and 30-40 minutes for large. Remove the beets from the oven and, once they have cooled sufficiently, open the foil bags.
  2. Peel the oranges and divide into slices. Cut off oranges top and bottom so they can be put on a cutting board. With a sharp knife, cut the peel from top to bottom, removing the peel and the white part so that the orange does not fibers left. Divide into separate segments. Fold the slices into a large bowl. Add avocados, onions, olives and peppermint.
  3. Peel the beets with paper towels. Cut the beets in four. Put it in a bowl of oranges, sprinkle with cheese, salt, pepper, then pour olive oil and lime juice. Stir and serve immediately. beetroot salad with orange.
