Delicious beef shurpa is fragrant, rich and very delicious soup that is easy to make at home. This soup is very popular in eastern countries. It is also sometimes called “corpa”, Shorpo, Chorba. I recommend making this dish for a family dinner day off!

- Prepare the ingredients we need.
- We wash and dry the meat (I usually wipe it with paper towel). Cut into small cubes.
- My tomatoes, we make an incision crosswise on each tomato, scald them with boiling water (this is necessary so that the skin is easier to remove). Peel and cut into slices.
- We clear the pepper from the tail and seeds, cut into strips.
- Peel the carrots, shinkum straws or rub on coarse grater.
- Peel the potatoes, cut into large cubes or cubes.
- We clean the onion, cut it and send it to the preheated with oil pan with a thick bottom (or in a cauldron), fry.
- Add meat to the onion and fry thoroughly.
- Then first add the tomatoes to the meat, then pepper and at the end carrots.
- Pour meat with vegetables with water (about 2.5 liters), add tomato paste.
- Add the potatoes and cook for about 20 minutes. Turn down the fire, and simmer soup for about 30 minutes on low heat.
- 8 minutes before cooking, add bay leaf to the soup and bouillon cube.
- At the end, add the garlic, passed through garlic squeezer.
- Serve shurpa with tortillas and finely chopped greens
