Valentine Letters Cookies

Let your loved one break the cookies before eating – a love message is hidden inside!

Cookie dough

  • 220 gr softened butter
  • 1 tbsp. granulated sugar
  • 1 large egg, beat lightly
  • 1 tsp vanilla extract
  • 3 tbsp. flour, plus for sprinkling
  • A pinch of salt

Royal icing

  • 4 tbsp. icing sugar, sift, if necessary more
  • 3 tbsp. l dry egg white
  • 6-7 Art. l warm water, plus for dilution
  • 1/2 tsp lemon essence
  • Red, pink and black gel food coloring
  • 3/4 Art. heart-shaped confectionery topping
  • Black food marker
  • Special equipment: rectangular shape for cookie cutter (10 cm.); rectangular shape for cutting biscuits (5 cm.); 4 pastry bags or bottles for decoration; plastic bags; baking twine

Recipe preparation:

  1. For the test. In a bowl of a stationary mixer with a nozzle in in the form of a blade mix butter with granulated sugar. Add egg and vanilla extract. Mix again at low speed, stopping periodically to scrape the mixture off the walls.
  2. Add flour and salt. Mix at low speed until a dough will form, and no layers of oil will remain in the bowl. The dough will be tight and should not stick.
  3. Cover two baking sheets with parchment paper.
  4. Divide the dough into two parts. Put one on the work surface lightly sprinkled with flour and roll into a layer thickness slightly more than 0.6 cm. Using a rectangular mold 10 cm. Cut 15 cookies. Put 7 pcs. for one baking tray, and 8 pcs. another. 5 cm cut. central parts of 5 cookies. Cut dough for 20 minutes. Wrap the remaining dough in cling film and place in refrigerator before use.
  5. Preheat the oven to 180 ° C.
  6. Bake cookies for 12-15 minutes. or until rosy in color around the edges. Place on a wire rack to cool completely. Give the baking sheets cool, then cover with paper again. Repeat the process rolling, cutting, cooling and baking with the remaining half pastry. In total 30 cookies will turn out, 10 of them with cored.
  7. For royal glaze. In the mixer bowl with with a whisk, mix the powdered sugar at low speed with dry protein. Add water and beat on moderately high. 3-5 minutes until hard peaks form. Add lemon essence and whisk at low speed, mixing everything. Lay out icing in three bowls, 1/4 tbsp. in each. Remaining in the mixer bowl cover the glaze with a damp paper towel so that it does not dry out. In one bowl, color the icing in red, in the other in pink, in the third – in black (the one in the mixer bowl will remain white). Add a drop of water to all 4 servings of the icing to dilute the consistency. (Check the consistency by sweeping a spoon over to the center of the glaze: ideally, the trace should completely disappear after 10 seconds. If necessary, dilute with water or add sugar thickening powder.) Place each serving of glaze in separate Pastry bags or bottles for decoration.
  8. Cut a sheet of parchment paper into 10 small strips, about 10 x 5 cm. On one side of the strip write love messages, for example, “I love you more than cookies!” and you lovely! ”
  9. Lay 10 whole cookies on a covered worktop parchment paper. Squeeze along the outer edge of each cookie white icing. Lay out cookies with a center cut out on top. Fill each 1 tbsp. l confectionery topping in the form of hearts. Поsqueeze white icing onto the upper outer perimeter of this cookie. Fold the love notes with the side written inward so that the ink did not touch the cookie. Put the folded note in each of cookies without a core and lay on top of the whole liver.
  10. Squeeze white icing onto the outer edges of the upper cookies and fill the entire perimeter so that all the cookies on top cover the icing. If there are gaps, move the glaze in them with toothpicks. Let the liver stand for about 3 hours, so that the surface became even and dry.
  11. When the top coat dries, apply a contour with a white glaze an envelope on half (5 pcs.) cookies. Scrape off a toothpick the top of the triangle so that there is room for a decorative print. With the red icing, put a small one in the center of each envelope print. Squeeze lines from both sides with white icing envelope flaps to the bottom corners – this will be the inside envelope. With pink icing, draw a few hearts on envelopes. Using a food marker, draw in the center cookie transverse dotted line and write “open here”.
  12. On the remaining cookies, apply three identical black icing horizontal lines in the center are fields for the address.
