  • 1 medium onion, diced
  • 1 diced celery stalk
  • 1 clove garlic, minced
  • 6 tbsp. crumbled corn bread
  • 2 eggs, slightly beaten
  • 2 tbsp. chicken broth
  • 2 tbsp. l chopped fresh rosemary
  • 2 tbsp. l chopped fresh cilantro
  • 1 tsp hot sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper

Recipe preparation:

  1. Cook the pork ribs: in a blender, grind in mashed potatoes olive oil, garlic and sage. Season with salt and pepper. Rub the mixture into the pork ribs, making sure that the mixture gets between cuts in a loin. Place the crown of ribs in the roasting pan and cover it with foil.   5. When the crown is prepared, remove it from the oven, cover foil and let stand for 15 minutes. Lay out part of the filling on a serving platter and place the crown on top. Fill center crown remaining filling. At the table, cut the crown into portioned slices.
