Strawberry Triple with pretzels

For strawberries:

  • 1100 ml. halved strawberries (about 6 Art.)
  • 3/4 Art. granulated sugar
  • 1 tbsp. l freshly squeezed lemon juice

For baby:

  • 110 gr. melted unsalted butter and a little more to lubricate the mold
  • 3.5 tbsp. little pretzels
  • 1 egg white
  • 1/3 Art. granulated sugar
  • 1 tbsp. l flour
  • Fine salt

For cream:

  • 450 gr curd cheese at room temperature
  • 1 tbsp. powdered sugar
  • 1 tsp vanilla extract
  • 1 and 1/4 Art. cold cream

Recipe preparation:

  1. Prepare strawberries: in a large stewpan mix 4 tbsp. strawberries and granulated sugar and heat over medium heat. Cook until the mixture begins to bubble, then increase the heat to moderate strong and cook, stirring occasionally, 15 minutes, until the berries become soft and the liquid doesn’t turn out thick enough to do not drain from a spoon. Remove from heat and add the remaining 2 tbsp. strawberries and lemon juice. Cool, then pour into a bowl, cover and put in the refrigerator for at least 1 hour, or better all night long.
  2. Meanwhile, prepare the crumbs: preheat the oven to 175 degrees. Lubricate generously with a 22 cm baking dish. butter. In a food processor, mix 3 tbsp. pretzels melted butter, egg white, granulated sugar, flour and 1/4 tsp. salt. Grind until wet dough forms. Put the dough in the prepared form in an even layer, slightly tamping. Remaining 1/2 tbsp. break the pretzels into pieces and press them into the dough. Bake 25-30 minutes until golden brown. Take out of the oven and cool completely without removing from the mold, then break into small pieces.
  3. Prepare the cream: just before serving whisk in a large bowl with a mixer at high speed for 2 minutes until smooth, curd cheese, powdered sugar and vanilla. In another bowl, whip the creamy cream with a mixer on high speed for 3 minutes until a thick foam forms. Neatly add half the whipped cream to the curd cheese mixture, then add the rest and mix.
  4. Lay cream, crumbs and strawberry mixture in layers in portions glasses or bowls. Cover them and refrigerate for at least 1 hour (you can leave in the refrigerator for 6 hours).
