The Mexican state of Sonora is considered home to delicious pastries. Coyotas is a hybrid of cookies and pie. Traditional Coyotas, that are baked in Sonora are made up of two cookie cakes, between which seals a delicious brown sugar filling – pilonsillo. - 1 kg. premium flour
- 1/4 tsp salt
- 500 gr. lard (coarsely chopped, or culinary fat)
- 25 gr yeast (powder)

Recipe preparation:
- Heat 100 gr. Pilonsillo sugar in 1 tbsp. water while he completely dissolve. Remove from the stove and cool.
- Put 1 kg in the mixer bowl. flour, salt and fat. Mix mixer at low speed using the nozzle of the scapula to granular consistency with small pieces of fat.
- Add yeast, remaining water, and dissolved in water pilonsillo. Keep whisking to mix thoroughly and knead the dough. Put the dough out of the mixer bowl and continue kneading hands for 3 minutes to make it non-sticky and soft.
- Cover with a towel and leave for 30 minutes.
- Preheat the oven to 200 ° C.
- Mix 350 gr. Pilonsillo with 10 gr. flour. Divide the dough by servings of 45 gr. Form the balls and roll them with a rolling pin. Transfer half of all circles to baking sheets parchment.
- Put in the center of each circle of dough 1 tbsp. l mixtures of flour and pilonsillo. Cover with the remaining circles and seal edges, pressing them in a circle with a fork.
