Sandwich Cookies “Linzer” Stars

  • 0.5 tbsp. chopped blanched almonds
  • 0.5 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp. pitted raspberry jam
  • Powdered sugar, optional
  • Special equipment: two forms for cutting down cookies in the form of stars or circles, one 4cm in size, the other 2cm.

Recipe preparation:

  1. For the test: whip in the bowl with an electric mixer butter until a homogeneous consistency. Add granulated sugar and continue to beat until the mixture will become airy (5 – 8 min.).
  2. In another bowl, combine flour, almonds, cinnamon and nutmeg nut.
  3. Knead and roll out the cookie dough: as it contains enough butter, he needs to “rest” for a while, after which it needs to be rolled out right away. Fold 3 large sheets Wax paper in one layer on a flat surface. Sprinkle each flour. Using a rubber spatula, mix flour with butter a mixture. When all the ingredients are combined, put one at a time thirds of the dough for each of the sheets of wax paper. Sprinkle each part with flour and on top put a piece of wax paper of the same size, to get three sandwiches from the dough. Compress each layer hands so that they become thin. This will save you a lot of time for further rolling out the test. Put two of them in refrigerator and work with each part separately. Roll out the first piece of dough as carefully as possible. The main thing is to avoid formation of folds or cracks. The thickness of the test should not exceed 3 – 5 mm. When the first part of the test is rolled out, put it in refrigerator for 10min. and repeat the same with the other test.
  4. Preheat the oven to 180C.
  5. Make the foundation of the future sandwich cookie: take the first part of the rolled dough from the refrigerator and cut out of it as many 4 cm stars or circles as possible. put the dough back in the refrigerator. Received figures neatly spread in one layer on a greased baking sheet. Repeat that same thing with the other two parts of the dough, remembering to clean the trim in the fridge.
  6. Make Sandwich Cookie Tops: Cut smaller stars sizes using a 2 cm mold from the center of half of the total received stars. Spread the rest of the dough between layers wax paper. Cut extra stars if necessary.
  7. Bake cookies until light brown (12 to 15 min.) Remove the baking sheets from the oven and let them cool slightly.
