Parfait is a cold dessert originally from France, it is usually prepared from sugar syrup, eggs and cream. In this raspberry parfait layers white chocolate mousse mixed with raspberry sauce, and the decoration is graceful topping of grated white chocolate and fresh berries. Dessert does not require baking. Fast and incredible yummy!

White Chocolate Mousse
- 110 gr. chopped white chocolate
- 2 tbsp. fat cream
- 3 tbsp. l powdered sugar
- 1 tsp vanilla extract
- 2 tbsp. raspberries
- White Chocolate Chip Topping
Raspberry coolie
- 1.5 tbsp. raspberries
- 3 tbsp. l granulated sugar
- 1.5 tsp freshly squeezed lemon juice

Recipe preparation:
- Cook the coolie berry sauce: combine raspberries, granulated sugar and lemon juice in a small saucepan and bring to boil over medium heat, rubbing with a spoon. The back of a spoon rub through a fine sieve into a bowl. Chill in the refrigerator.
- Put white chocolate and a quarter cup of fat cream in microwave-friendly utensils. Melt in the microwave at intervals of 30 sec., mix until completely melted chocolate and the formation of a dense uniform consistency.
- Prepare the mousse: in a large bowl, beat with a mixer on medium high speed remaining 1.75 cups cream until formed foam. Add icing sugar and vanilla; beat for about 2 minutes. before the appearance of soft peaks. Gently stir in about 1 tbsp. whipped cream into melted white chocolate, then add the rest cream until completely mixed.
- Distribute half of the mousse among 6 pans; put on top 1 tbsp. l raspberry sauce and some fresh berries. Next put the remaining mousse, sauce and berries in a layer; sprinkle with chips white chocolate. Refrigerate for at least 30 minutes.
