  • 85 gr. pancettas, cut into small cubes
  • 1/2 tbsp. cherry tomatoes, cut in half
  • 2 tbsp. l olive oil
  • 1 tbsp. l fresh chopped chives
  • 1 tsp red wine vinegar
  • 2-3 heads of lettuce varieties of the “small pearl” variety (approximately 16 leaves)
  • 1/4 Art. grated parmesan

Chives

  • 1/4 Art. mayonnaise
  • 2 tbsp. l flavoring-free yogurt
  • 1 tsp fresh chopped chives
  • 1 tsp freshly squeezed lemon juice
  • 1/2 tsp Dijon mustard

Recipe preparation:

  1. Chives with mayonnaise: mix in a small bowl 1/4 mayonnaise with yogurt, chives, lemon juice, mustard l salt and 1/4 tsp pepper. Leave me alone. Mayonnaise can be made the day before serving and store in the refrigerator.
  2. B-portioned salad: Passer pancetta in pan over medium-high heat until crisp (5-7 minutes). Move to a plate. Mix in a medium bowl tomatoes, olive oil, chives, vinegar, 1/2 tsp salt and 1/4 hours l pepper. Let stand for 5 minutes.
  3. Spread large lettuce leaves on a serving platter. Place 1.5 tsp in the center of each leaf. mayonnaise with chives. Add on top about 1 tbsp. l tomato mix and some crispy pancetta. Sprinkle with parmesan.
