Ingredients for the recipe:
- 7 rings of fresh pineapple (about 1-1.5 cm thick.)
- 1 tbsp. brown sugar, slightly pressed into a glass
- 170 gr unsalted softened butter
- 6 slices of bacon
- 2 tbsp. wheat flour
- 1.5 tsp baking powder
- 1/2 tsp baking soda
- A pinch of salt
- 3/4 Art. granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3/4 Art. low fat buttermilk or kefir

Recipe preparation:
- Preheat the oven to 180 degrees. Fry the bacon in a pan over medium heat, periodically turning to get crisp, it will take about 9-11 minutes; lay out the pieces bacon on a paper towel, then chop it well and set aside.
- Leave in a pan 3 tbsp. l fat, and drain the rest. Add 4 tbsp. l (60 gr.) Butter and melt it on slow fire. Pour this mass into a round baking dish 23 cm in diameter by rotating and tilting the shape in order to cover all the bottom. Sprinkle brown brown evenly over the oil mixture sugar.
- Place one pineapple ring in the middle of the baking dish, and put the rest around it, if necessary, imposing them edges on top of each other. Take about 3 tbsp. l chopped bacon and pour it in the middle of the pineapple rings or between them.
- Combine flour, baking powder, baking soda and salt in a medium to the size of the bowl. In a large bowl, the remaining butter and beat sugar with a mixer at medium speed for 2 minutes until light and airy mass. Drive individually eggs, add vanilla extract. Set the mixer low speed, gently hammer the prepared flour with baking powder into three doses, alternately pouring buttermilk and adding flour mixture again. Set the mixer to maximum speed and beat the dough for about 15 sec until a uniform consistency is obtained.
- Pour the dough into a baking dish on top of pineapples. Bake about 1 hour, checking readiness with a toothpick (stick it in the center pie and take out, if there is no trace of dough on the toothpick, then your pie ready). Put on a stand and let cool for 15 minutes., then draw a knife along the edges of the mold and take out the cake by turning baking dish on a flat dish.
