- 2 tbsp. l olive oil
- Culinary spray, for lubricating molds
- 4 large eggs
- 1.5 tbsp. brown sugar
- 1 tbsp. canola oil
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp baking soda
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 2 tbsp. premium wheat flour
Glaze
- 1 tbsp. powdered sugar
- 1/4 tsp ground cinnamon

Recipe preparation:
- Make cupcakes: preheat the oven to 180 ° C. Cover the pan with parchment paper.
- Cut the stalk of the pumpkin to create a flat surface. Set the pumpkin flat side down, cut it in half and scoop out the seeds. Lubricate the pumpkin with a little olive oils. Place the pumpkin halves on a baking sheet and bake until softness, from 45 minutes to 1 hour. Allow to cool for at least 10 minutes before separating the flesh from the peel. Put the pulp pumpkins in a food processor and chop in a puree. Measure 2 cups pumpkin puree. Put leftovers in a container for use in other recipes.
- Lightly grease or put paper liners in the mold for muffins with 12 recesses. In a large bowl, mix pumpkin puree and eggs. Then add brown sugar, canola oil, baking powder, cinnamon, baking soda, cloves and nutmeg and mix together. Add flour and mix gently.
- Pour the dough into prepared forms and bake until until the toothpick comes out clean, about 35 minutes. Give cool the cupcakes a bit before removing them from the molds.
