Perfect Pumpkin Cupcakes

Cupcakes

  • 2 tbsp. l olive oil
  • Culinary spray, for lubricating molds
  • 4 large eggs
  • 1.5 tbsp. brown sugar
  • 1 tbsp. canola oil
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 2 tbsp. premium wheat flour

Glaze

  • 1 tbsp. powdered sugar
  • 1/4 tsp ground cinnamon

Recipe preparation:

  1. Make cupcakes: preheat the oven to 180 ° C. Cover the pan with parchment paper.
  2. Cut the stalk of the pumpkin to create a flat surface. Set the pumpkin flat side down, cut it in half and scoop out the seeds. Lubricate the pumpkin with a little olive oils. Place the pumpkin halves on a baking sheet and bake until softness, from 45 minutes to 1 hour. Allow to cool for at least 10 minutes before separating the flesh from the peel. Put the pulp pumpkins in a food processor and chop in a puree. Measure 2 cups pumpkin puree. Put leftovers in a container for use in other recipes.
  3. Lightly grease or put paper liners in the mold for muffins with 12 recesses. In a large bowl, mix pumpkin puree and eggs. Then add brown sugar, canola oil, baking powder, cinnamon, baking soda, cloves and nutmeg and mix together. Add flour and mix gently.
  4. Pour the dough into prepared forms and bake until until the toothpick comes out clean, about 35 minutes. Give cool the cupcakes a bit before removing them from the molds.
