Ingredients for the recipe:

Crepes

  • 1 and 1/4 Art. premium flour
  • 1 tbsp. l Sahara
  • Zest 1/2 lemon
  • A pinch of salt
  • 1 and 1/4 Art. milk
  • 1 egg
  • 2 tbsp. l (30 gr.) Butter, melt

Blueberry sauce

  • 2/3 Art. blueberry jam
  • Juice 1/2 Lemon

Custard

  • 2 tbsp. l Sahara
  • 2 tsp corn starch
  • A pinch of salt
  • 3/4 Art. milk
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 3 tbsp. l powdered sugar

Recipe preparation:

  1. Crepes: pour flour, sugar, lemon zest and salt. Shake the milk, eggs and 1 tbsp in another bowl. l melted butter. Combine until smooth. without lumps.
  2. In a cast-iron frying pan with a thick bottom, heated at medium temperature, melt a little butter. Pour in the dough, and distribute it in a circular motion. Fry the pancakes for about 1-2 minutes., then turn over and fry on the other side half as much, about 30 sec or 1 min. Keep the pancakes warm while you do the sauce.
  3. Heat blueberry jam to make blueberry sauce in a small saucepan over low heat or in the microwave. Stir in lemon juice; set aside.
  4. Make custard: whisk in a small saucepan sugar, corn starch and salt in milk, and bring to almost boiling. Remove from heat immediately, stir milk until dissolved in it sugar. In a small bowl, shake the egg yolk and vanilla extract, add a couple of tablespoons of hot milk to warm the yolk. Now put the yolk in the hot milk to brew it. Put the saucepan on low heat, and a little boil until thickened.
  5. Spread the custard in the center of each pancake and roll up. Put crepes on a dessert plate. Put on top tablespoon of sauce, and sprinkle with powdered sugar. Carry to to the table.
