Pancake Dough
- 4 eggs
- 1 tbsp. whole milk
- 1/2 tsp salt
- 1.5 tbsp. flour
- 4 tbsp. l (60 gr.) Melted butter
Apple filling
- 4 tbsp. l (60 gr.) Butter
- 1/2 tbsp. Sahara
- 6 green granny smith apples, peeled, cut core and sliced
- 1/2 tsp ground cinnamon
- 1/4 tsp vanilla extract
- The juice of half a lemon
Caramel sauce
- 1 tbsp. Sahara
- 1/2 vanilla pod
- 8 tbsp. l butter
- 1/2 tbsp. fat cream
- 1 tsp salt
- Special equipment: electric crepe maker or pancake pan.

Recipe preparation:
- For a pancake dough: in a planetary mixer, mix the eggs, milk, salt and 1 tbsp. water before foaming. Add flour and whisk to a homogeneous mass without lumps. Scrape the mixture off the sides of the bowl, and then add melted butter. Beat for 30 seconds. Leave for 12 hours or overnight to “weaken” in the test gluten.
- For apple filling: heat the pan over medium heat. Add sugar and butter to melt. As soon as it happen, add chopped apples and cook until soft (from 7 to 9 minutes). Stir in cinnamon, vanilla extract and lemon the juice. Let the filling cool.
- For caramel sauce: heat a small saucepan on moderately high fire. Add sugar and half vanilla pod. Heat, stirring constantly. Carry on until sugar won’t turn into liquid reddish brown caramel. Add oil and stir 2 minutes until it is completely dissolved. Slow pour in the cream and cook for another 1 minute. Remove from heat and add salt. Set the sauce before use so that it has time cool and thicken.
- Cooking pancakes: pre-heat the crepe maker to 95 ° C or put the pan on a slow fire. Distribute 1/2 tbsp. test on the surface. Roast for 1 minute, then turn over pancake. Apply 3/4 tbsp. apple filling. Cook in for 2 minutes, then fold the pancake in half. 2 more minutes of frying the right and left third of the resulting crescent wrap to the center. Pour a little pancake caramel sauce and serve. Repeat the same with the remaining test.
- Note: if desired, you can sprinkle ready pancakes with icing sugar and serve with whipped cream or ice cream.
