- 900 gr. minced meat from turkey (a mixture of white and dark meat)
- 3 tbsp. l (45 gr.) Butter
- 1 tbsp. l olive oil and a little more for lubrication
- 1 tbsp. l chopped thyme
- 2 – 3 small stalks of celery with leaves, finely chopped
- 1 small apple, peeled and chopped
- 1 small onion, finely chopped
- 1.5 tbsp. crackers with herbs
- 1 – 1.5 tbsp. chicken broth
- 1/3 Art. dried cranberries
- 1 tbsp. mature white cheddar grated
- 1 tbsp. l seasonings for poultry
- 1 large egg
- Cranberry Sauce for Serving
Cider Gravy
- 3 tbsp. l (45 gr.) Butter
- 2 tbsp. l flour with a slide
- 2 tbsp. chicken or turkey broth
- 0.5 tbsp. frothy apple cider
- 1 tbsp. l Worcester sauce
- 1 egg yolk, optional
- Finely chopped parsley for decoration, optional

Recipe preparation:
- Preheat the oven to 200 ° C. Over medium heat in large in a pan, heat the butter and olive oil. Sprinkle in thyme pan, celery, apples, onions, pepper and salt over to taste. Fry vegetables until soft for 7 – 8 minutes. Shift fry in a bowl and let cool.

- Cut the prepared mitlof into slices and serve with gravy from cider and cranberry sauce. Cider Gravy: over medium heat heat butter in a saucepan. Add flour and cook, stirring for 2 minutes. Then pour the broth into the stewpan, cider and worcester sauce. Salt and pepper abundantly. Cook on low heat until the gravy thickens. If you use the yolk, whisk it lightly in a medium-sized bowl. Stirring constantly pour a little gravy from the cider so that the yolk is brewed. Then add remaining sauce and mix. Pour into a gravy boat, sprinkle with parsley and serve.
- Note: This mitlof is ideally served with a side dish of steamed green beans or sweet potato puree. For cooking cook mashed potato diced yam at the rate of one tuber per person. Then drain the water and add the chicken stock, salt, pepper, nutmeg and maple syrup to taste. All carefully crush in mashed potatoes. Mitlof can be stored in the refrigerator in a closed tare. Then preheat in the oven at moderate temperature or cut into slices and heat in a pan with the addition of chicken broth. Cider topping without adding yolk can be prepared advance and store in the refrigerator. Heat it before use over medium heat and enter the yolk according to the recipe.
