Magi pie

Pie of the Magi (Spanish: Rosca de Reyes – ring of the Magi) – the main thing feast on the feast of the Epiphany, January 6, in all Hispanic countries. Unlike the pies of the Magi of other Catholic countries, in Spain and Mexico are always baked in the shape of a ring and decorated with bright candied fruit. This ring marks the gift that the magicians brought baby jesus. Traditionally, a plastic figure is hidden in a ring the baby and the one who comes across a surprise should take it to the fortieth day after Christmas to the church, which symbolizes Meeting of the Lord.   • 0.5 tbsp. warm water
  • 1 sachet (2 and 1/4 tsp. Or 7 g.) Dry active yeast
  • 565 gr. flour + 2 – 3 tbsp. l powder for powder
  • 150 gr. sugar, if you like sweeter, add another 1/4 Art.
  • 3 large eggs
  • 3 egg yolks mixed with 4 tbsp. l milk
  • 1/4 tsp salt
  • 1.5 tbsp. l orange extract
  • 170 gr butter, softened + additionally for grease bowls and film
  • Freshly grated zest of 1 orange

Topping

  • 1 egg yolk
  • 3/4 Art. flour
  • 6 tbsp. l margarine or vegetable fat
  • 0.5 tbsp. powdered sugar
  • Dried fruits, such as figs, candied fruits from orange and citron, strips of quince jam or cocktail cherries *
  • 1 beaten egg to glaze the cake
  • 1 tbsp. l whole milk or water
  • White sugar for sprinkling pie
  • 2 – 3 plastic baby figures

Recipe preparation:

  1. Pour warm water into a bowl and sprinkle yeast. Shuffle with a fork to dissolve the yeast, then leave for 5-10 minutes until foam formation. Stir in 0.5 tbsp. flour and cover the bowl with a film. Put in a warm place for 25 minutes so that the mixture doubles in volume.
  2. Meanwhile, in a large bowl, mix the flour, eggs, yolks, sugar, orange extract, orange zest, salt and cream butter. Stir until friable. The dough can Knead both manually and with a mixer.
  3. Add the yeast mixture to the bowl and mix. The dough will be very sticky but supple, add flour if necessary. Transfer it to a surface lightly sprinkled with flour and knead, until you get a smooth dough. It takes about 15-20 minutes. Or 7 minutes in a mixer. DO NOT add too much flour to the working surface, the texture of the dough should be very soft, wet but supple. If you add more flour than necessary, your cake will be dry.
  4. Once the dough is soft and smooth, shift it to a bowl greased with oil and cover with a greased cling film. It must be moist and supple. Put the dough in a warm place, so that it doubles in volume, about 1.5 hours. In your kitchen it must be warm so that the dough rises well. If after this time the dough will not double in volume, let it stand longer. The fermentation process reveals the aroma and taste of future baking, so slow and long fermentation is always better than fast.
  5. While the dough rises, mix the following ingredients for dressing: margarine with icing sugar until creamy condition. Then add flour and egg yolk, mix until homogeneous consistency.
  6. After the dough rises for the first time, lay it on surface lightly sprinkled with flour and remember a little. Then form a round cushion and make a hole in the middle, to get a ring. Transfer dough to oiled baking tray and cover freely with greased food film. Put in a warm place so that it doubles in volume, at least 45 minutes. Prepare the whole decor and egg mixture by mixing leftover egg with milk or water.
  7. Preheat the oven 20 minutes before baking to 190 ° C by setting grill in the lower third of the oven.
  8. Grease the dough twice with the egg mixture to form a golden crusts. From the sugar paste, form strips and decorate the dough. Spread dried fruits on the surface of the ring by gently pushing them into dough. Sprinkle with sugar and bake for 10 minutes. Turn down the temperature oven to 175 ° C and bake for another 10 minutes until the cake is covered golden crust. Depending on your type of oven, this may take more time.
