Maamul – shortbread biscuits stuffed with traditionally dates, pistachios or walnuts are served. They are very popular in Levantine cuisine (Palestine, Jordan, Syria and Lebanon). Making this sweet is usually an event for the family and friends, everything happens in a cozy atmosphere on the eve of Ramadan.
Maamul cookies are formed into unique shapes using hand-made carved wooden forms that suggest the appearance of the filling. Flat and round – filled with dates, elongated and oval – with nuts.
Time: — Сложность:Medium Quantity: 12 pcs. Recipes use volumetric containers volume: 1 cup (st.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cups (st.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (Art.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1 teaspoon (tsp) – 5 ml.

For the test:
- Semolina – 4.5 cups
- Nutmeg – 1/2 teaspoon
- Sugar – 1/4 cup
- Butter (softened) – 2 cups
- Rose water – 3 teaspoons
- Warm water – 1/4 cup
For filling:
- Sliced pitted dates – 2 cups
- Butter – 1 tablespoon
- Rose water – 1 teaspoon
- Walnuts / Pistachios (crushed) – 2 cups
- Sugar – 2 tablespoons

Recipe preparation:
- In a bowl, mix semolina, nutmeg and sugar. Add oil and mix until smooth.
- Pour pink and warm water into a separate bowl, combine composition with oil – semolina mixture.
- Knead well, form a soft ball and leave overnight (at least 5 hours).
- Prepare the filling with a blender – mix the ingredients and form small balls (half the size of a ball for golf).
- Divide the dough into balls the size of an entire golf ball. If a the dough is too dry or crumbly, add warm water.
- Flatten one dough ball on a flat surface, lay on fill it, top with another layer of dough and squeeze form. If you suddenly didn’t have a form for Maamuly, you can just make cookies like our relatives dumplings or pies, print patterns with a fork or skewer. Shape and grease hands beforehand so as not to stick.
- Put cookies on a baking sheet sprinkled with flour and bake when 180 C for about 20 minutes, avoid darkening the cookies, Cookies must be baked until lightly browned.
- Remove from the oven and let cool, sprinkle with sugar powder.Maamul can be stored in an airtight container at room temperature for a week. The workpiece can be frozen on up to 3 months.
