Italian cookies “spumoni”

Ingredients for the recipe:

  • 2 tbsp. and 2 tbsp. l baking flour
  • 0.5 tbsp. l baking powder
  • 1/4 Art. l table salt
  • 170 g. Salty melted butter (3/4 tbsp.)
  • 1 tbsp. light brown sugar
  • 0.5 tbsp. granulated sugar
  • 1 egg plus 1 egg yolk
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 1 tbsp. semisweet chocolate chips (granules)
  • 1 tbsp. ground pistachios
  • 0.5 tbsp. candied fruit

Recipe preparation:

  1. Preheat the oven to 160C. Lay out 2 parchment baking sheets paper.
  2. Combine the flour, baking powder and salt in a small bowl. Leave the resulting mixture for a while.
  3. In a large bowl, whisk the butter, light brown sugar and granulated sugar until smooth. Add the whole egg egg yolk, almond and vanilla extracts. Shuffle up homogeneous state.
  4. Using a rubber spatula, enter in small quantities a mixture of flour in sugar and egg mass. Add chocolate there crumbs, pistachios and cherries, mix everything.
  5. Roll out dough balls equal to the volume of 1/4 cup, and spread them on prepared baking sheets at a distance of 5 cm from each friend. Bake cookies for 10 minutes. Change baking sheets places and continue to bake until light golden 8 more – 10 min. Cool the biscuits. Enjoy a treat in Christmas morning with a cup of hot coffee and in an atmosphere of good mood.
