Hot Meat Pudding “Haggis”

Ingredients for the recipe:

  • 1 lamb stomach
  • 1 mutton liver
  • 1 lamb heart
  • 1 ram tongue
  • 225 gr. chopped kidney fat
  • 3 medium sized chopped onions
  • 225 gr. roasted dry oatmeal
  • 1 tsp coarse salt
  • 1/2 tsp ground black pepper
  • 1 tsp dried ground rosemary
  • 1 tsp dried ground thyme
  • 1 tsp grated nutmeg
  • 1 tsp sage

Recipe preparation:

  1. Rinse your stomach thoroughly and soak it overnight in a cold salted water.
  2. Wash your liver, heart, and tongue. In a large pot of boiling salted water, boil these parts over medium heat for 2 hours. Remove and chop. Remove connective tissue or skin and throw it away.
  3. In a large bowl, mix the chopped liver, heart, tongue, renal fat, onions and fried oatmeal. Salt and pepper, add dried rosemary, thyme, nutmeg and sage. Add a little broth so that the mixture can be to form. Remove the stomach from cold salted water and fill 2/3 with the mixture. Sew or fasten your stomach. Some pierce the stomach with the teeth of the fork so that it does not burst in the process приготовления.
