Homemade nougat

Recipe preparation:

  1. Cover the bottom and sides of the baking dish with a size of 10×15 cm rice paper. Beat egg white in a heat-resistant bowl until steady peaks.
  2. Mix sugar, glucose syrup, honey and water in a small stew-pan. Put on very low heat and mix for about 3-5 minutes, until the mixture reaches the stage of light crunch (when drops of syrup dipped in cold water harden instantly), or until the caramel thermometer shows 135 ° C. Remove from heat. Not stop stirring, pour the syrup into the egg white and continue beat until mixture is smooth and begins to thicken.
  3. Stir in the almonds and spread the mixture on rice paper in prepared form, carefully compressing it. Cover with another layer of rice paper and place a light weight on top, evenly distributing its weight on the surface.
