Ginger Cookies with Fresh Ginger

Recipe preparation:

  1. Preheat the oven to 180C.
  2. In a medium-sized bowl, combine flour, soda, ginger, cardamom, cloves and salt.
  3. Pour brown sugar into the bowl of the stationary mixer and put butter. Using a nozzle for shortcrust pastry, beat everything at low speed for 1-2 minutes, until the mixture becomes airy and does not turn white. Add molasses, egg and fresh ginger and beat at medium speed for 1 minute. Put candied ginger and mix well with a silicone spatula. Add dry ingredients to liquid and knead the dough until smooth.
