Recipe preparation:

  1. In a heavy saucepan, bring the milk to a boil. Pour semolina and, constantly stirring with a whisk, cook over low heat. Add sugar, then cook for 5-6 minutes, stirring occasionally. Take off pan from the heat and add the butter and eggs one at a time, stirring. Add vanilla extract. The mixture should be thick but flowing like sauce.
  2. Preheat oven to 190 ° C. Lubricate deep form for baking 25 cm in size with butter. Put 8 on the bottom of the mold sheets of dough filo so that the edges of the dough hang from the sides of the form. Lubricate each leaf gently with melted butter. Pour the milk mixture for the dough.
  3. Trim the remaining filo dough sheets to fit the shape and grease each leaf with ghee. Put greased sheets on the filling, then grease the hanging edges of the sheets with melted butter and roll them up, to make a seam. Make a very sharp knife on the surface diagonal cuts in two directions to the surface it turned out a diamond-shaped pattern. (This will make it easier to cut the pie later, and the syrup will be better absorbed into the cake.) Sprinkle with a little water and bake the cake for an hour, until the surface will not brown and the filling will not seize.
  4. Once you put the pie in the oven, start cooking syrup. Bring water with sugar and 1/2 lemon to a boil and cook in for about an hour. Remove half the lemon and squeeze the juice into syrup. Throw away the lemon. Pour the syrup over the cake as soon as you take out him out of the oven. Be careful, the syrup will boil heavily and may to burn you. Let cool and serve, cutting the pie into pieces along the cuts you made before baking.
