  1. Remove the seeds from the olives and lemon, and finely chop the flesh.
  2. Cut the potato into small pieces. Spread in a bowl with olives, oil, cumin, lemon zest, salt and black pepper. Sprinkle with lemon juice, mix and spread in a deep pan. Add water and bring to a boil.
  3. Close the lid and cook for ten to twelve minutes on medium heat, the potato should become soft. Remove the lid, cook another two minutes to let the water evaporate. Sprinkle the finished dish parsley.
