Every year on diwali (hindu new year) boxes are given to my father with dried fruits. Once upon a Thanksgiving when I was presented organic dates, I remembered this tradition and decided to cook on the festive table not cranberry sauce, but chutney. Share with friends: Food Photography: Floyd Cardoz Time: – Used in recipes volumetric containers: one cup (tbsp.) – 240 ml. 3/4 cup (st.) – 180 ml. 1/2 cup (tbsp.) – 120 ml. 1/3 cup (st.) – 80 ml. 1/4 cup (st.) – 60 ml. 1 tablespoon (tbsp.) – 15 ml. 1teaspoon (tsp) – 5 ml.
Ingredients for the recipe:
- 2 tbsp. sliced dates
- 1 tbsp. dried sour cherries
- 2 tbsp. chopped dried apricots
- 2 tbsp. fresh cranberries
- 1/4 Art. olive oil
- 1/2 cinnamon sticks
- 3 stars anise star
- 2 clove buds
- 1/2 tsp mustard seed
- 1/4 Dried Chilli Pasilla de Oaxaca
- 2 tbsp. orange juice
- 2 tbsp. direct-squeezed apple juice (juice with pulp)
- 1 tsp grated orange zest (tamp)
- 1/4 Art. peeled and thinly sliced ginger
- 1.5 tbsp. l fennel
- 1 tsp yellow mustard seed
- 1/4 Art. cider vinegar
- Salt

Recipe preparation:
- In a 6-liter thick-walled pan. over moderately high heat heat oil until it starts to shine and fry cardamom, star anise and cloves for a minute. Add brown seeds mustard and chili. When the seeds start to shoot and appear aroma, after about 30 sec., remove the pan from the heat and gently pour in orange juice and apple cider.
- Bring the mixture to a boil and add cherries, dates, zest, ginger, dried apricots, cranberries, fennel, yellow mustard seeds and vinegar. Bring the mixture to a boil quickly and cook without covering and stirring occasionally until the liquid evaporates and the fruit soft and tender, about 1.5 hours. Add salt over taste. Let the chutney cool completely before serving. Store the sauce in sealed container in the refrigerator for 1 week. Output: 6 tbsp.
