Curd Easter “Imperial”

Ingredients for the recipe:

  • 900 gr. home-made grained or pressed cottage cheese
  • 1.5 tbsp. Sahara
  • 225 gr. cream cheese at room temperature, cut into pieces
  • 6 yolks from large hard-boiled eggs, crumble
  • 1.5 tbsp. fat cream
  • 3/4 Art. ground almonds
  • 1/2 lemon, grate zest
  • 1 tsp lemon essence
  • 1/2 tsp vanilla extract
  • 1 large vanilla pod, cut lengthwise
  • 1/2 tbsp. yellow raisins
  • Candied candied fruit for decoration

Recipe preparation:

  1. In a large bowl, combine homemade or pressed cottage cheese, sugar, cream cheese and yolks.
  2. Grind the mixture in portions in a food processor until smooth, adding equal amounts of cream at each run. Shift back to the bowl.
  3. Mix ground almonds, lemon zest, lemon essence and vanilla extract. Scrape the seeds out of the vanilla pod and add them to a creamy mixture with raisins. Mix well.
  4. Take a clean unused flower pot with a volume of 1.9 l., cover with a double layer of gauze. Put the curd inside mix, then gently fold the edges of the gauze over the surface. Put a saucer on top, and on it – a load weighing 900 g., For example, a jar of water. Put the flower pot in a big enough a container so that water flows into it. Refrigerate at least for 12 hours
  5. Empty the container. Turn Easter on a serving plate and carefully remove the cheesecloth. Garnish with candied fruits: pressing, lay out letters ХВ (“Christ is Risen”).
