Cupcake Gingerbread Man

  • 440 gr. (2 tbsp.) Unsalted butter, room temperature
  • 3 tbsp. l molasses without preservatives
  • 1 tbsp. l chocolate nut paste, for example, Nutella
  • 3 tbsp. powdered sugar
  • 0.5 tbsp. unsweetened cocoa
  • 1 tsp ground ginger
  • 1 tsp natural vanilla extract
  • 1/4 tsp salt

Gingerbread Man

  • 48 mini cupcakes (preferably ginger), paper forms take off
  • Various sweets, chewing marmalade and royal icing for decorating
  • Special equipment: large and flat serving dish, large pastry bag with a tip star and small pastry bag with a simple round tip

Recipe preparation:

  1. For ginger cream: In a large bowl, beat with a mixer on medium speed butter, molasses and chocolate-nut paste to a homogeneous consistency. Scrape the mixture off the sides of the bowl. Add icing sugar, cocoa, ginger, vanilla and salt and beat on moderately low speed, increasing as you add ingredients. Whisk at a moderately high speed for a few seconds until the cream becomes completely homogeneous.
  2. For the gingerbread man: Place the cupcakes on the dish in the shape of a man (take about 14 cupcakes to make head, 14 cupcakes for arms and chest and 20 cupcakes for the abdomen and feet).
  3. Transfer the cream into a large pastry bag with a tip star and drop it with curls, generously covering the tops of each cupcake (the cream on each cupcake should touch the cream on the adjacent cupcake).
