Ingredients for the recipe:
- 60 gr butter
- 1 large shallot head, chop
- 1/2 tsp dried red pepper flakes
- 1/4 Art. wheat flour
- 3.5 tbsp. fish stock or oyster juice
- 2 tbsp. fat cream
- 350 gr ripe brie cheese, cut off the crust
- 1 bunch chopped green onions
- Salt and ground black pepper
- 1 tbsp. champagne
- 24 pcs. fresh oysters

Recipe preparation:
- Melt the butter over low heat. Add shallots and pepper flakes and passer until soft. Add flour and cook until the mixture begins to change its color, about 1 minute. Gradually mix with broth and cream. Increase heat to moderate heat and bring to a boil; extinguish at boil for 10 minutes. Add brie cheese, green onions, salt and pepper, to taste and mix until the cheese melts. Add champagne to the soup. Add oysters and cook for 3 minutes.
