Cranberry Pomegranate Terrine – A Detailed recipe cooking. Ingredients for the recipe:
- 250 gr fresh cranberries
- 2 tbsp. pure pomegranate juice
- 3/4 Art. Sahara
- 1 cinnamon stick
- 2 peas of black pepper
- 2 large strips of orange zest, plus small strips zest for decoration
- Salt
- 3 packets (6 teaspoons) non-flavored gelatin

Recipe preparation:
- Rub cranberries with 1/4 tbsp. Sahara. Leave on for 20 minutes to sugar dissolved.
- Meanwhile, in a stewpan combine 1/2 tbsp. the remaining sugar, 1.5 tbsp. pomegranate juice, cinnamon stick, peppercorns, orange zest and a pinch of salt; boil while stirring sugar will not dissolve. Remove from heat; leave to insist on 20 minutes. Throw out cinnamon, peppers and orange zest.
- Pour 1/2 tbsp. the remaining pomegranate juice and 1/4 tbsp. cold water in a bowl and pour gelatin on top. Leave to swell, don’t mixing for 5 minutes. Add spiced pomegranate juice to the mixture. gelatin and mix until gelatin dissolves.
- Spread a thin layer of cranberry mixture into a mold sized 23-by-13 centimeters; pour in enough pomegranate-gelatin mixture to cover the berries (about 3/4 tbsp.). Cool the jelly until it begins to harden for about 30 minutes.
- In the meantime, mix the remaining cranberries with the remaining mixture. gelatin and leave without cooling. Once the bottom layer hardens, pour in the remaining gelatin mixture and cool until completely hardened, at least 2 hours or overnight.
- Before serving, swipe the knife along the edge of the mold and turn over terrine on the dish. (Hold the terrine form in warm water to soften the gelatin.)
