Chocolate pancakes butcher

The executioner is a special kind of thin pancakes, common in Central and Eastern Europe, they are served, as a rule, with various fillings. These banana-strawberry-filled butchers decorated with whipped cream, chocolate ganache and fragrant raspberry sauce. Real jam!

Ingredients for the recipe:

Pancake dough

  • 2 tbsp. l cocoa powder
  • 2 tbsp. l boiled water
  • 1 tbsp. beaten eggs
  • 1 tbsp. flour
  • 1 tbsp. whole milk
  • 1 tbsp. l melted butter
  • A pinch of ground cinnamon
  • A pinch of salt

Whipped cream

  • 1 tbsp. fat cream
  • Pinch of sugar
  • A few drops of vanilla extract

Raspberry backstage

  • 120 gr. raspberries
  • 30 gr Sahara
  • 30 gr red wine
  • 1 tsp corn starch, diluted 1 tsp. cold water

Chocolate ganache made of white or dark chocolate

  • 1/2 tbsp. cream
  • 1 tbsp. l (15 gr.) Butter
  • A few drops of alcohol like brandy, Amaretto, Blue Curacao and etc.
  • 230 gr. chocolate (white or dark)
  • Vegetable oil for lubrication
  • Boiled condensed milk for toppings
  • Sliced strawberries and bananas for filling
  • Small pieces of chocolate for decoration
  • Icing sugar for decoration
  • Cocoa powder for decoration

Recipe preparation:

  1. For pancake dough: Dissolve cocoa powder in a bowl with boiling water. Add eggs, flour and milk and mix until homogeneity. Stir in butter, cinnamon and salt and leave the dough is infused.
  2. For whipped cream: Whip the cream with sugar and vanilla extract until peaks appear. Keep cold until filing.
  3. For raspberry backstage: Combine raspberries, sugar and wine in stew and bring to a boil. Add corn starch with water and simmer until a thick consistency. Wipe sauce through a fine sieve.
  4. For ganache: Bring cream and butter to a boil in a stewpan over moderately high heat. Remove from heat, add alcohol, then chocolate. Stir until smooth consistency.
  5. To make pancakes: Preheat oiled vegetable oil pancake pan or crepe maker. Distribute a thin layer of dough. Bake until golden with one side, then turn over and bake until browning on the other side. Set aside the finished pancake. Repeat the same with the remaining test.
  6. Put boiled condensed milk in each pancake, add bananas and strawberries. Fold the pancakes with a tube and cut in half. Spread on a platter with a serving of whipped cream and ganache. Pour over the raspberry wings. Garnish with pieces of chocolate, sugar powder and cocoa powder.
