  • Butter – 200 grams
  • Ground Cinnamon – 2 teaspoons
  • Sugar – 170 grams
  • Eggs – 7 pieces (divided into proteins / yolks)
  • Cognac – 75 ml (1/3 cup)
  • Zest of one orange

For syrup:

  • Water – 2 cups
  • Vanilla Extract – Teaspoon
  • Orange juice – a tablespoon
  • Sugar – 2 cups
  • Cognac – 1/4 cup

Recipe preparation:

  1. Beat sugar with a mixer until smooth and oil (for 5 minutes). Add egg yolks one at a time times, mix.
  2. Pour in cognac and fill in orange zest, mix and set aside.
  3. In a large bowl add chopped walnut, breading crackers, cinnamon, cloves, nutmeg, baking powder and stir a spoon.
  4. Combine the two mixtures and carefully move, taking care not to chop nuts too.
  5. Egg whites with a pinch of salt, beat with electric mixer in a separate bowl. The mixture should be dense and form peaks.
  6. Add the meringue with a spatula to the flour mixture and mix with light circular motions from the bottom up.
  7. Lubricate the mold with a diameter of about 30 cm and put in it dough. Bake in a preheated oven at 170 ° C for about 35 minutes. Allow Karidopita to cool.
  8. Cook syrup: add to a small saucepan ingredients for syrup, boil until sugar dissolves.
  9. Before serving a piece of Greek walnut cake pour hot syrup.
